For moms on the go, making sure their kids are energized is very important. Luckily, there's a snack for that.

I talked with Brenda Duby with the United Supermarkets family about a nutritious snack for parents and their children alike.

Brenda brought a snack called No-Bake Energy Bites into the studio. My initial response was: "Do they taste like a cardboard box"? She definitely proved they don't by showing me the delicious ingredients: old-fashioned oats, peanut butter, ground flax seed, dark chocolate chips, honey and vanilla extract.

The oats provide fiber, energy and help lower cholesterol, she explained, while the peanut butter provides protein and good fats. Ground flax seed is an excellent source of fiber and omega 3s, and the dark chocolate provides flavonoids which are rich in antioxidants.

Honey has been used for years for its antibacterial, anti-fungal and anti-inflammatory properties. Meanwhile, the vanilla extract is purely for flavor.

Here's the simple recipe which literally takes five minutes to whip up:

  • 1 cup (dry) old-fashioned oats
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup dark chocolate chips
  • 1/3 cup honey
  • 1 teaspoon vanilla extract

Brenda suggests heating your honey and peanut butter together in the microwave for 20 seconds, then mixing the rest of your ingredients in with them. Use a spoon (or your hands) and form the mix into balls. The energy bites keep for up to a week in the fridge, and this recipe makes 20-25 balls.

Put those delicious little orbs of goodness onto some wax paper on a plate, put them in the fridge until they set up, approximately 30 minutes to an hour and enjoy!
